Abstract This work was carried out to evaluate the effect of fruit ripening stage at harvest (“1/3 ripe” and “3/4 ripe”, respectively with 30% and 75% of red color) and passive modified atmosphere (MA) and active MA (with initial initial low O2 and/or high CO2) on quality of ‘San Andreas’ strawberries, with emphasis on bioactive compounds and metabolites of fermentative metabolism. ABSTRACT This is the first study to investigate the antibiofilm, antioxidant and antimutagenic activities and phenolic compounds of Allium orientale. Antimicrobial activity of ethanolic extracts of A. orientale was determined by a broth microdilution method. Antibiofilm activity was evaluated by microplate biofilm assay. The antioxidant activity was determined using three complementary assays; namely, DPPH scavenging, β-carotene-linoleic acid, and total phenolic compounds assays. Antioxidant potential of tomatoes cultivated in organic and conventional systems BABT

The objective of the study was to compare the effect of organic and conventional cultivation on the antioxidant compound content and antioxidant activity of the Carmen tomato cultivar. Tomatoes were analyzed regarding ascorbic acid, phenolic compounds, lycopene content and antioxidant activity. Organic tomatoes presented higher content of ascorbic acid and total phenolics (641.39 and 4466.66 mg/100 g EAG on dry wt basis) than did the conventional tomatoes (510.16 and 3477.50 mg/100 g EAG on wt dry basis, respectively). Antioxidant properties of Spirulina (Arthospira) platensis cultivated under different temperatures and nitrogen regimes BABT

The main aim of this work was to investigate the effects of temperature and nitrogen concentration on the antioxidant potential of extracts from Spirulina (Arthospira) platensis biomass. S. platensis biomass obtained at 35ºC and with 1.875 g.L-1 or 2.5 g.L-1 of sodium nitrate in the culture medium presented higher concentrations of phenolic compounds. The antioxidant potential of methanol extracts of biomass on the enzymatic browning caused by peroxidase were 29 and 35%, respectively, being the reduction related to the amount of phenolic compounds present in this extract.

Antioxidant properties, quantification and stability of betalains from pitaya (Hylocereus undatus) peel Ciência Rural

Pitaya peel can be used as a raw material for betalains extraction. The aim of this research was to quantify phenolic compounds, antioxidant activity and betalains on pitaya peel. Furthermore, evaluate the betalains stability against various pH conditions and exposure time of heating. The results showed that pitaya peel contains phenolic compounds and presented antioxidant activity. Moreover it showed high concentration of betalains (101.04mg equivalent to betanin. 100g-1) which were stable over a wide pH range (3.2 - 7.0) and were resistant to heating (100oC) up to 10 minutes at pH range from 3.7 to 5.5. Therefore, pitaya peel is a promising source of betalains which can be applied as a natural colorant for food.

The genus Indigofera (Fabaceae) is used in folk medicine to treat gastrointestinal pain. In this study, we investigated the antiulcerogenic properties of Indigofera truxillensis Kunth. Oral administration of MeOH extract did not produce any signals of acute toxicity. The antiulcerogenic activity was assessed in different models of acute gastric ulcers (100% ethanol, piroxicam 30 mg.kg-1, hypothermic restraint stress and pylorus ligature) in mice and rats. Abstract The aim of this study was to determine the content of bioactive compounds and antioxidant activity present in three fruit species from the Brazilian Cerrado: carnauba (Copernicia prunifera (Mill.) H.E. Moore), murici (Byrsonima crassifolia L. Rich)and oiti (Licania tomentosa (Benth) Fritsch). Among analyzed fruits, oiti showed the highest total phenolic content (1236.42 ± 34.06 mg GAE 100 g-1) followed by murici (468.90 ± 27.30 mg GAE 100 g-1) and carnauba (314.44 ± 9.50 mg GAE 100 g-1). En este trabajo se evaluó la calidad microbiológica de la vainilla por la presencia de enterobacterias, coliformes totales, mohos y levaduras, así como la cantidad de compuestos fenólicos por técnicas de HPLC (ácido 4-hidroxibenzóico, 4-hidroxibenzaldehído, ácido vainillínico y vainillina) durante el proceso de beneficio artesanal a fin de establecer puntos críticos de control. La calidad sanitaria en los productos hortofrutícolas debe considerarse una prioridad en la producción de alimentos. Actualmente en México, existe una gran preocupación por las asociaciones de productores y gobierno federal para adoptar sistemas de producción que reduzcan riesgos de contaminación (SRRC). Para la implementación de estos sistemas, es necesario cumplir con una serie de requisitos, entre ellos se encuentra la validación de procesos.
